I need a report for a single employee that has pay date, hours, and gross pay from hire date which was last year. How can I get a report like this?

Under Pay Period use the Cost Accounting report sort by Employee Code, uncheck all employees and select the start and end with employee for that person and then set the date range desired. That will give you the items you want.
