If you setup an Hourly Employee and then go to pay him or her and it only shows the hourly rate in the gross pay field, you set it up as a Salaried employee.
Click Payroll and then Employee to open the list of employees. Then select the employee to edit and double click to open in edit mode. Then select the Pay tab so you see a screen like below. You will find that you have an "S" in the "Emp. Type" entry. S is for Salaried. Click the button to open the pick list and set the employee to be Hourly as shown below:
